Minestrone Summer Recipe
Cut all the onions into chunks. Brown the chopped onion and first add the beans, brown and then add all the vegetables except for cauliflower, pearl and peas.
Pour 2 liters of hot water. Add some pepper. Cook for an hour and 10 minutes on a moderate heat.
Add the tomato, the cabbage and the peas to the minestrone. Wait another 10 minutes and finally add the pearl.
Simmer again for 10 to 13 minutes (the cooking time of the Pearl).
To serve, garnish with parsley and add flaked Parmesan. The summer soup should be served just lukewarm.
